  This has what you are looking for at a great price, unless you just want to spend a fortune for the absolute best.

  Cuts through meat with relative ease. My mother, who is a much better cook than I, somehow got a small cut on her hand. She doesn't even remember how it happened. She is Asian and is accustomed to using a cheapy butcher knife. I have used this to cut through watermelon. I recommend it.
